What’s Cookin’ Week of Cinco De Mayo!! (RECIPE REPEAT WEEK)

- The recipe does not require that I buy ingredients that I do not normally purchase…Ya know, the ones that you buy and then sit in your spice cupboard or refrigerator until they hit due date and you throw them away. The ones you stare at for a week after you buy them waiting for the perfect opportunity to use them.
So, what’s happening on the menu this week….RECIPE REPEATS! This is one of those week’s where I am super busy. We have 20 family members coming to town to celebrate my daughter’s First Holy Communion…a grand event that requires time to prepare for. So, I give myself a break this week and go for all oldies but goodies. Do you have weeks like that? YEP! We all do. Give yourself a break and go for the go-to meals if your freezer is not stocked!
What’s Cookin’ Week of Cinco de Mayo…
Meatless Meal 1: Egg Frittata split in half so I can have lots of different toppings…some are more kid friendly. Broccoli and cheese on one side…..Broccoli, cheese, Sundried tomatoes and mushrooms on the other side. Serve with side of fruit and big side salad.
Meal 2: Broiled Tilapia Parmesan served with edamame and carrots, roasted asparagus and cherry tomatoes, and freekah that is mixed with peas, parmesan, and olive oil.
Meal 3: Soy Marinated Flank Steak (served for the family on Saturday because it is soooooo good!!!) served with sweet potatoes, roasted kale chips (kale with olive oil and salt in oven at 400 degrees for 20 minutes) and homemade Rosemary Bread. Substitute another frozen bread roll. My favorite is Pepperidge Farm Multigrain rolls.
Meal 4: Chock Full of Veggies spaghetti sauce served with Spinach and Cheese ravioli and steamed broccoli
