Recipe Redux – September – No-Cook Desserts
FROSTY MANGO PROTEIN DREAM POPS
This month’s Recipe Redux theme is No-Cook Desserts. For some reason, the first thing that comes to mind is that it will entail some sort of fruit so I went with that. I had lots of ideas but decided that I wanted to make a popsicle. The last attempt I made on making my homemade fudge pops did not go over well but that was probably because I was trying to mess with chocolate. Not sure I will try that again. This time around, I figured I would try to make homemade orange cream-cicles. I had these as a child in the pop-up format. However, I wanted to put a new twist on them and use one of the store bought juices that my kids like from Bolthouse Farms, the Mango Protein juice. I figured that maybe I could add a little extra nutrition punch to the dessert.
Frosty Orange Dream Pops
3 cups orange juice or other juice like you prefer. I used Bolthouse Mango Protein
1- 14oz can sweetened condensed milk (I will try non-fat next time but decided that was too risky the first time around)
1/4 cup lemon juice from concentrate
Popsicle holders or 10 paper cups with 10 wooden sticks and aluminum foil
In a large bowl or large measuring cup like the one below, stir together juice, milk, and lemon juice.
Pour into paper cups or popsicle molds or paper cups. If using paper cups, cover them with foil and then stick wooden sticks in them so the stick stays upright. Freeze overnight or during the day. I should note that my popsicles were soft in the mold so we had to eat them out of the mold (reason for no cute pix of my kids eating them!!) so I think using the paper cups next time and then peeling the cups away from the mold may be a better strategy for popsicles that contain a milk in them. 🙂
