Banana Apple Bran Mini Muffin Recipe

Adapted from a recipe in the Petit Appetit Cookbook by Lisa Barnes.

These muffins make a great breakfast or snack!!  Enjoy!!

Ingredients

  • 1 cup organic whole wheat flour
  • 1/2 cup organic oat bran
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup (1 stick) unsalted butter
  • 3/4 cup organic applesauce
  • 3 medium organic bananas, 1 mashed (about 1/2 cup) and 2 sliced
  • 1/2 cup packed organic light brown sugar
  • 2 cage-free organic eggs
  • 1/8 cup flax seeds (optional)

Method

Step 1

Use a fork to comine flour, bran, baking soda, flax seeds, and salt in a small mixing bowl

Step 2

Melt the butter in a small saucepan over low heat or microwave for 25 seconds

Step 3

In a large bowl, mix together the melted butter, applesauce, mashed banana, sugar, and eggs.

Step 4

Add flour mixture to applesauce mixture and stir until just blended. The batter should be lumpy and very moist.

Step 5

Spoon batter into prepared muffin cups, filling two-thirds full. Place banana slice on top of each muffin

Step 6

Bake mini muffins fo 12 minutes (or until golden brown) or for regular muffins bake 15-18 minutes.

Step 7

Cool muffins on a wire rack for 5 minutes before turning out the muffins *Note that a toothpick test may not work to test the doneness of the muffins as the banana keeps them moist.
