Roasted Spaghetti Squash2013-06-07

- 1 spaghetti squash
- 2 oz solid unsalted butter
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 2 tbsp honey
- 1 tbsp Italian parsley, chopped
Pre-heat oven to 350 degrees. Bake squash on a foiled lined baking sheet for 20 minutes and turn squash a quarter turn. Turn squash a quarter turn 3 more times at 15-minute intervals for a total cooking time of 65 minutes. Squash will be tender. Allow to cool for 30 minutes.
Cut squash in half exposing the "spaghetti" inside. Peel away from shell in large mixing bowl.
Melt butter in saucepan. Add spices and honey. Pour mixture over squash and mix well. Sprinkle with parsley and serve hot.
