I got a little free time on my plane rides over the last two weekends and have been inspired by a few recipes in my Cooking Light magazine.  So, we have a strong Cooking Light focus this week.  I decided to have a 5-INGREDIENT MENU THIS WEEK…  This does not include the sides…

Meatless Monday:  Porcini-Parmesan Frittata served with side salad and fruit salad

Tuesday:  Tarragon Chicken served with jasmine rice and steamed broccoli

Wednesday:  Turkey-Sausage Gnocchi Soup served with whole grain rolls

Thursday:  LEFTOVERS…from Monday and Tuesday!

Friday:  Sunflower Seed Panko Encrusted Tilapia served with creamy risotto and peas
