What’s Cookin’ Week of April 7th
Hi everyone! I missed last week because of a ton of travel. This resulted in pulling meals and spaghetti sauces out of the freezer for easy weeknight cooking. Thank god for the time I spent making those meals. In light of how happy I was that I had those, I added a recipe at the bottom for some great freezer ready spaghetti sauce so you can be happy with the meal you put on the table each night!
What’s Cookin’ Week of July 7th
Meal 1: Tasty Tofu Nuggets served with roasted vegetable medley of parsnips, green peppers, yellow peppers, and cherry tomatoes (made on Sunday night for the week)
Meal 2: Quick and Easy Grilled Lemon Chicken served with steam broccoli and whole wheat risotto (I usually steam up some peas and carrots or other veggie to toss in the risotto. I just play this one by ear….add parmesan, a flavored olive oil of some sort)
Meal 3: Asian Salmon served with jasmine rice and bok choy sauteed with soy sauce and garlic
Meal 4: Scallops (they are on sale at Wholefoods this Friday) served over whole grain pasta with Kale and Walnut Pesto
Bonus Freezer Meal: Crockpot Bolognese Sauce – Make two recipes and place in mason jars to store in your freezer for fast and easy weeknight cooking.
