What’s Cookin’ Week of August 4th

Meatless Meal 1:  Breakfast Casserole with Spinach, Leeks, Cottage Cheese, and Goat Cheese served with Fruit Salad (kids) and Arugula Salad with cranberries and choice of dressing

This is a RECIPE REPEAT…I never got to make this last week because when it came down to it, I was just not in the mood for eggs so I skipped it and went to Plan B which was another item on my menu. Since I had done all my grocery shopping for the week, I was prepared!  (Bonus of planning!)

Meal 2:  Shrimp Soba Noodles in Peanut Sauce.  I will add some yummy edamame beans on the side for an extra vegetable serving.

Meal 3:  Sesame Crusted Tofu with Sriracha (the recipe called to make homemade sauce but you could buy this sauce as well) served with green beans stir-fried in light sesame oil and brown rice

** This recipe states that it serves two so you may need to double the recipe for your family.

Meal Tip:  Make your coating ahead of time on the weekend.  Buy extra firm and drain on the weekend so it is ready.

Meal 4:  Salmon simply baked served with steamed broccoli and leftover brown rice
