I hope everyone had a great Thanksgiving but, guess what….It is time to let the games begin people!!  Christmas is coming and here comes the major holiday rush.  In the Baradel household, we are totally done with Thanksgiving.

 The day after Thanksgiving, we buy our tree and decorate it, and decorate the house…Bye, Bye, Birdie!!!!

So what’s with the holidays…..Although the holidays can be relaxing, they can be a bit stressful as there are parties, family visiting, shopping to be done, kids home from school, etc.  So, the challenge this month is to keep it together at home.  From that, I mean trying to maintain some kind of consistency in your family meal time.  Remember, that family meals together do not have to be an hour long.  They can be 15 minutes long if that is the time that you have.  A toddler should be able to sit for about 5-10 minutes and a pre-schooler about 10-15 minutes.  So, reset your expectations and decrease you probability of being disappointed that your family is not like the Swiss Robinson Family and eating and playing cards for hours at a time!!

 What’s Cookin’ Week of December 2nd

Monday: Coconut Tofu Squares served with steamed green beans, raw shoestring carrots, cucumber and a side salad fro the adults.  I will probably have some rolls ready for the kids as I am not sure how well this will go over!

The recipe link will show the recipe using chicken but I am going to try with tofu for Meatless Monday.

Tuesday:  Pan Fried Cod with Steamed Broccoli and Kale Chips

For kale chips, I really do not follow a recipe.  I just throw some olive oil, sea salt, and parmesan on them and put them in the oven at 375 degrees for about 15 minutes….done!  YUM!!!

Wednesday:    Chicken Curry in a Hurry served over white/brown rice mixture

Thursday:  Shrimp and Mushroom Risotto served with a Iceberg lettuce salad….Yes, that is correct.  You read it.  Iceberg lettuce.  Ava decided she liked iceberg lettuce and this was the first time that she tried it.  Although I know it is not the most healthful choice, it at least introduces the concept of salad, which my kids reject, in a kid friendly way.  We will have her eating baby kale in no time!!

I really do not have a recipe for this.  I am going to follow the directions on the risotto box then add tiny shrimp, mushrooms (will saute before hand with some garlic), parsley, lemon zest, and maybe a few other herbs that strike my fancy at the moment.  I will use seafood broth as my base. 

Friday:  Friend’s coming over for dinner so not sure what we are making just yet.

Saturday:  Out to dinner….been cooking all week.

Sunday:  Slow Cooker Beef Stew served with hard, crusty rolls and side salad – I hope it is cold outside!!!
