I hope that everyone had a great Thanksgiving holiday.  We spent our Thanksgiving at a friend’s house and unfortunately, our turkey did not finish cooking until 10pm as we were headed out…so, net-net, we had a vegetarian Thanksgiving.  But, truthfully, the appetizers and sides were so good that I did not care one bit.  🙂

Having the kids home all week made things a little crazy so I did not get my menu plan posted last week.  Sorry about that.  But, I repeated a few things this week, like the Honey Roasted Carrots, because they were so yummy and easy.  I actually made these for Thanksgiving dinner and they were a hit.

What’s Cookin’ Week of December 8th

Meatless Meal:  Chicken Alfredo with Peas served with a side of sauteed broccoli, tomatoes, and bacon

Meal 2:  Slow Cooker Barbecue Beef served with Honey Glazed Carrots (these are super yummy!!)

Meal 3:  Monterey Chicken served with roasted red potatoes and steamed green beans

Meal 4:  Shrimp Tacos served with Fiesta  Bean Salad 

Meal 5:  Baked Salmon with BBQ sauce on top served with oven roasted edamame over couscous
