What’s Cookin’ Week of February 17th
HAPPY PRESIDENTS DAY! Enjoy your day off!….and for those in ATL…enjoy your 6th day home straight with the kids!
Meatless Monday: Our Mondays have gotten filled up with practices so we are not really eating together as a family. I will making eggs with whole grain toast and fruit for the next few upcoming weeks. I know this is nutritious, filling, and my kids will gobble it up super fast!! I will also throw in some of my yummy pancakes
Tuesday: Meatloaf (frozen from Wholefoods that my mom bought when she was here), roasted potatoes, and green beans.
I will cut some small Yukon Gold potatoes in half, toss with garlic, italian spices, olive oil and salt. I will also throw in the green beans to roast those up as well. This should be yummy!!!
Wednesday: Ava getting her First Penance this night so we will go out afterwards to celebrate.
Thursday: Easy Roasted Salmon with Bok Choy served with jasmine rice (using 1/2 water and 1/2 coconut milk)
Friday and Saturday: Out of town!!! Dad is in charge…
Sunday Slow Cooker: Pepperoncini Beef aka Drip Beef served over whole grain brown rice with a side salad and green beans for the kids
