What’s Cookin’ Week of January 17th

Last week was quite successful in following the daily menu plan.  I only missed the Tortellini Soup.  I ended up defrosting some spaghetti sauce because that was what I was craving.  I was also tired and I knew the kids would complain about the soup so I was not prepared to be patient with them so just avoided it all together.

There was a great and encouraging article in the WSJ that Americans are Starting to Eat Healthier.  Click here to read the article!   But to summarize, we are eating less calories, eating at home more, and reading food labels…All huge wins!!  Great work USA!

What’s Cookin’ Week of January 17th

Monday:  Spinach and Cheese ravioli with steamed broccoli

Tuesday:  Broccoli and Sausage Egg “Muffins” served with a side salad and fruit salad. Since my kids do not eat alot of green salad, I usually serve a fruit salad for the kids and a side salad for the adults.

Wednesday:  Soy Marinated Flank Steak, baked sweet potatoes, and steamed broccoli

(Making two servings here for Friday dinner)

Thursday:  Leftovers from Monday and Tuesday

Friday:  Leftovers using Wednesday Flank Steak….Warm flank steak over mixed greens with roasted new potatoes, carrots, mushrooms, sun-dried tomatoes, and blue cheese.  Serve with whole wheat roll.

Saturday:  Out to dinner

Sunday:  OH, NO…I have not had any fish this week….99.9% of the time we have salmon once a week….so, here goes…Poached Salmon with mixed veggies and quinoa.  YUM!!!
