School is looming and the shopping begins…new book bags, new lunch boxes, new pencils and pens, new shoes, new socks, etc!  It is sort of fun.  Remember when you were a kid and always looked forward to your new book bag.  I questioned why my kids were getting new book bags since last year’s was fine but I decided that this was one of the best parts of going back to school so I splurged and every one (except Lindsey who is too little for book bag) got one.

School time also means that we start to refocus on our schedules and sit down family meals may become a bit more routine…which is a good things since family dinner is related to the better health of all family members, better grades for children, and higher self-esteem.  The list goes on…but overall, we all know, having dinners together is just simply a good thing.

What’s Cookin’ Week of July 28th

Meatless Meal 1:  Breakfast Casserole with Spinach, Leeks, Cottage Cheese, and Goat Cheese served with Fruit Salad (kids) and Arugula Salad with cranberries and choice of dressing

I do not think my kids are going to go for the goat cheese so I may substitute in cheddar or something like that.  I don’t want to go too crazy when trying a new recipe.

Meal 2:  Salmon with Lemon and Oregano served with steamed sugar snap peas and Lemon Risotto

Meal 3:  Pork Chops with Dijon Herb Dressing served with steamed broccoli (a staple in my house) and simply baked sweet potatoes

Meal 4:  Simple Pan Fried Chicken served with fresh basil from my garden, mozzarella cheese, tomatoes, pesto and french bread

Meal 5 (I have time for 5 meals this week):  Slow Cooker Thai Chicken and Vegetable Curry served over brown rice This recipe is a bit complicated so I may just get some pre-cut veggies and do use those instead to save time.
