How is your upcoming week? If it is super busy, refer to my menu last week for some quicker recipes. I am inspired this week and making a new recipe on Monday, Tuesday, and Wednesday. But….don’t be surprised if I end up switching this up a bit because I am over zealous right now! 🙂
What’s Cookin’ Week of March 16th
Meatless Monday: Broccoli and Tofu Stir-fried Rice served with edamame beans
Tuesday: Chicken Marsala Pasta served with a side of broccoli (made extra on Monday night) and side salad. In this recipe, you can swap out the cream with 2% milk if you would like.
Wednesday: Salsa Verde Chicken Enchilada Bake served with simple side salad
Thursday: Leftvovers from Monday (I am at a conference all day for RDNs in the state of GA so will need a heat up fast meal!!)
Friday: Leftovers from Tuesday and Wednesday free for all…
Saturday: Salmon with Big Daddy’s BBQ sauce – ON THE GRILL! Fingers crossed for warm weather…I will serve with an assortment of grilled vegetables.
Sunday: Out to Dinner…
