What’s Cookin’ Week of March 24th *New* 4 Meals a Week!
I have decided to change up how I am going to present my recipes for the week. Since your schedule is different than mine, I have eliminated the days of the week to just suggest 4 dinners for the week.
Well, we all know that life is busy and cooking more than 4 nights a week is so difficult in today’s world. So, let’s take the pressure off all of us, strive to cook 4 meals during the week and plan smart by either doubling a recipe when we cook it the first time or just repurpose things you make into other meals on the nights you are not cooking. So, basically you have 4 fresh dinner nights, one out to dinner night, and two leftovers nights. If you can only make 3 meal, then make 3 meals and feel good about the 3 you make.

Meatless Meal 1: Veggie Patch Tofu Pie served with side salad and whole wheat bread rolls

Meal 2: Warm Your Belly Bison Ragu (double the recipe and freeze some!) served over whole wheat noodles and your favorite vegetables
Meal 3: Crispy Oven “Fried” Chicken served with green beans sauteed in olive oil, garlic, and lemon and mashed potatoes
Meal 4: Marinated Salmon Served with Pepper Crust with cucumber vinagarette served with sugar snap peas and whole wheat couscous
