Happy Post Halloween! Was your Halloween tons of fun filled with ghost, goblins, and oh, so much candy! Ours was for sure and here is a my picture to prove it! My kids are allowed to keep 20 pieces of candy and then we give the rest to the Ronald McDonald House. Every year, there is a bit of discussion about that it is not enough, etc. but they get over it quickly after I explain to them how many kids do not get to go trick or treating. And truthfully, after about one week, they have forgotten about the candy and it finds a happy home in my trash can! And, if you are wondering, they are allowed to have one piece every day.
But, now we hit November and as I am writing this, it is cold and windy outside. I am truly a Florida girl at heart so I am not looking forward to the upcoming months in regards to the weather. However, what I am looking forward to are all the fun celebrations that are just around the corner. Remember to plan ahead during this busy time of the year. Now is the time to start cooking up some extra meals to throw in the freezer for those nights when you are going to a party and your sitter doesn’t cook!

Meatless Meal: Spinach, Mushroom, Feta Quiche served with a Red Pepper Soup
Meal 2: Lime Vinegarette Tilapia Tacos served with Fiesta Bean Salad
Meal 3: Steak, Shitake, Bok Choy Stir Fry served with Orange Ginger Brown Rice
**COOK EXTRA BROWN RICE FOR MEAL 4::
Meal 4: Quick and Easy Lemon Chicken served with Rosemary Roasted Butternut Squash and Brown Rice
