I hope everyone had a fabulous Halloween!  If you are an Atlantan, don’t forget to drop your Halloween candy off at my house so I can bring your extras to the Ronald McDonald house.  They really appreciate our donations every year.  The donations go to the children at the house who are siblings of children at CHOA.  Many times, they have to celebrate holidays and birthdays away from home if their brother or sister is in the hospital.  Our candy is used for celebrations and parties!!

 What’s Cookin’ Week of November 4th

Meatless Monday:  Quesadillas filled with puree of cannellini beans, mozzarella, and spinach with a side of fruit and/or salad.  

Tuesday:  Parmesan and Panko Breaded Chicken with Roasted Cauliflower, Broccoli, and Tomatoes

No set recipe for this chicken.  Just mix some grated parmesan and panko bread crumbs together.  Dredge chicken in egg white and then in parm/panko mix and bing bang boom, you have Parmesan and Panko Breaded Chicken.  Bake at 350 degrees for about 20 minutes.  

Wednesday:  Baked Sweet Chili Sauce Salmon with Green Beans and Whole-wheat couscous

I just threw a bit of Sweet Chili sauce on the salmon and baked it at 350 degrees for about 18 minutes.
I usually mix a little parmesan and mixed veggies (frozen) in my couscous to make it more colorful.  

Thursday:  Leftovers from Tuesday

Friday:  Bison Ragu over Whole Wheat Noodles with side salad of arugula, feta, pine nuts, and cranberries drizzled with olive oil and lemon and a dash of sea salt

Saturday:  Out to dinner!!

Sunday:  Ham and Cheese Quiche with Whole Wheat Crust and side salad
