YIPPEE….YAHOO!  We are leaving for Disney on Friday!  So, a fast week of packing and a short week of cooking are in store.  I am sure I will be super busy so there will alot of shortcuts this week so that I can spend my days getting ready, finishing up work and spend less time cooking in the kitchen.  We call this CLEAN OUT THE FREEZER WEEK!

Yes, we all have freezer food that we need on hand just in case.  Since many things we find in the freezer section would be in the “processed” category of foods, it has the potential of being high fat and high sodium amongst other things.  Except for your simple steam in the bag veggies, most will have sauces, spices and other ingredients that contribute to that “processed” food category we try to stay away from —  at least most of the time.

I should also mention that the Chicken Noodle Soup from last week was great.  However, the preparation of making the whole thing homemade was long so be prepared.  Also, if you have any fear of dealing with meat, don’t make the homemade chicken stock.  I have to be honest here, I considered becoming a pescatarian after deboning the chicken.  I have taken apart chickens before but not to that degree of cleanliness to the bone!!!

What’s Cookin’ Week of October 6th

 Meatless Monday:  Spaghetti with Roasted Broccoli and Tomatoes.  Toss with EVOO, coarse sea salt (optional), parmesan-romano cheese, and pine nuts.

Tuesday:  Bell Evan Coconut Breaded Chicken with green beans sauteed in EVOO, lemon zest and garlic.

These frozen chicken breast are my kids favorite and really yummy.  Try them out for one of your fast meals. 

You can find these at Wholefoods, Fresh Market, or Kroger.

Wednesday:  Sea Cuisine Tortilla Encrusted Tilapia with side salad and mexican corn

These fish filets are also really great!  These are at Publix or Kroger.

Thursday:  (the day before we leave)  Egg and Cheese sandwiches on whole wheat english muffins served with whatever fruit is leftover in the house.  If here is none, we will go with applesauce and mandarin oranges.

Friday, Saturday, and Sunday…..OFF TO DISNEY!

THERE WILL BE NO MENU OF THE WEEK FOR WEEK OF OCTOBER 14 OR 22.   I am only home one day during that time period so the cooking will be minimal.
