What’s Cookin’ Week of April 15th

Reality hits!! School resumes, carpool resumes, routine resumes! Ho Hum! The beach was tons and tons of fun and we are now full-throttle to finish up the last bit of the school year. We had a wonderful time in Naples visiting with my mom and step-father.

The beaches were wonderful and the amount of shell collecting we over the top! We combed alot of beach for alot of shells.

I would have to say that the eating highlight of last week was the sauce that we ordered out from THE SAUCE LADY! This sauce was awesome, killer, amazing…basically the best Beef Bolognese and Boscaiola Mushroom Sauce in the whole entire world. You better bet that I will be ordering it online to be delivered to my house. If you come to my house and I serve one of these sauces and I tell you it is mine, I am lying!

Here is the menu for Week of April 15th

Monday: Whole wheat noodles with mixed vegetables (from the freezer) with olive oil and parmesan

Tuesday: Hawaiian Shrimp Kabobs substituted with shrimp (because Tyler LOVES shrimp) served with brown rice, black beans, and a simple salad loaded with veggies

Wednesday: Slow Cooker Chicken with potatoes, carrots, celery, and onions added to the slow cooker. Serve with an arugula salad with shredded leftover carrots and celery bits.

Thursday: Salmon with Rub with Love Seafood Rub….the best ever in the world. Served with steamed broccoli and whole wheat couscous. Add any leftover veggies that you have around the house to the couscous. Pinenuts is also a nice addition to add a bit of nutty flavor.

Friday: Leftovers from Wednesday night

Saturday: Out to Dinner

Sunday: Parmesan “Uncle Sam’s Cereal Crusted” Cod served with quinoa mixed with veggies and roasted asparagus and cherry tomatoes
