What’s Cookin’ Week of April 29th
I am writing my blog on Wednesday of last week! I am leaving tomorrow for the SCAN Conference in Chicago (cold!!) so I had to get next weeks menu done early. Since we are barely into the week, I can only comment that the Spags and Meatballs were super yummy and fast in preparation. Like that!! There are lots of leftovers. Like that!!

What’s Cooking Week of April 29th
Meatless Monday: Spinach and Cheese Ravioli with spinach sauteed with olive oil and garlic
Tuesday: Chicken Tortilla soup from Souper Jenny’s. Souper Jenny is an Atlanta icon for the best soups and salads around! I add some spiral whole wheat pasta to her soup to make it a bigger meal. I serve with a nice garden side salad that is loaded with veggies.
Wednesday: Broccoli Rabe, Bacon, and Eggs Bruschetta – how fun does that sound! Serve with a side of fruit to lighted it up a bit. I always think bacon goes well with fruit. Must be the salt and sweet together. I will be using real bacon. I got in trouble for “faken bacon” (as my nephew, Jared, called it) once before.
Thursday: Pan-Fried Salmon with Roasted Asparagus (Harvest of the Month) and Tomatoes with a side of Whole Wheat Orzo with carrots and peas mixed in.
Friday: HAPPY THIRD BIRTHDAY, LINDSEY!!! Kid’s dinner….Mac N Cheese with Peas and Coconut Chicken from Bell Evan’s
Saturday: Chicken Marabella (family favorite) with simply steamed green beans and leftover orzo from Thursday night
Sunday: Grilled BBQ Chicken with Ann Dunaway’s Broccoli Casserole
