Monday: Pumped Up Sesame Salmon Bites served with Kale Chips and Parmesan Risotto
To make the kale chips, set oven for 400 degrees, toss kale with olive oil and salt (to taste) and bake for about 10-12 minutes.
Tuesday: “Mac Daddy” Salad with grilled chicken and Whole Wheat Bread Rolls (Alexia Brand)
— Mac Daddy translates into REALLY BIG AND FILLING!
On Sunday, I will grill out some chicken so that they are prepared for Tuesday night. I will slice the chicken into thin slices and serve over a salad with Parmesan Oregano Homemade Croutons and all sorts of vegetables and pine nuts
Wednesday: Grilled Cheese with Raw Carrots and Hummus Dip (Chris and I have a dinner that night so I will make something quick and easy for the kids that requires only a small clean-up)
Carrot Tip: Buy carrots that are still on their stalk and served them to the kids like this…In my house, we call this “Carrots like a Bunny Rabbit” — just a little trick to make it fun. They love it!
Thursday: Pan Fried Cod served with brown rice mixed with peas and carrots. I will serve Green Beans on the side
Saturday: Havana Night at LifeTime!! Kids are on their own. They will fend for themselves!
Sunday: THE THREE LITTLE P’S: Pasta, Peas, and Pine Nuts served with a side salad and steamed broccoli (HUBBY REQUEST!)
Chris loves peas and he loves the simple dish of whole wheat thin spaghetti mixed with peas, olive oil, and parmesan. I jazz mine up a bit and add either sundried or roasted tomatoes and whatever yummy veggie that I have lying around.
