What’s Cookin’ Week of August 19th

Hi all!  Last week was pretty crazy.  We are starting a new school on Monday so last week was filled with 4 different orientation events!  Thank you Holy Spirit Preparatory School for making us feel super welcome and informed.  

Personally, I am not sure who is more excited about school starting…me or the kids!  I will miss the lazy summer days but I am also looking forward to getting back into a routine of some sorts.  Work suffers for me when my kids are home all the time so this inevitably creates a small layer of extra stress.  I am hoping that after the first week, which is always a little crazy, things will be back to normal.   How was your first week back to school?  Who was more excited – you or your kids???

Meatless Monday:  Spinach Manicotti served with a side salad and green beans

Tuesday:  Slow Cooker Coconut Curry Chicken served over white basmati rice and steamed sugar snap peas

So, we have missed the last two tries!  I am determined to make it this week!!!

Wednesday: Leftovers from Monday and Sunday

Thursday:  Skinny Baked Broccoli Macaroni and Cheese with Panko Crusted Chicken Nuggets

Friday:  Chicken Quesadillas with Black Beans and Corn

Saturday:  Family out to dinner night

Sunday:  Slow Cooker Pork Chops with Parmesan Fried Brussel Sprouts

We never got to this last week. Opps! I usually miss a recipe one time a week! Do you?
