What’s Cookin’ Week of August 5th

I am looking forward to this being my last race week. I only did three this season and for some, this is minimal but for me, this is a lot on top of the kids, work, cooking, and just life in general. I am super excited to try out some new classes at Lifetime that I have wanted to try but have not for fear of getting injured. If I do anything outside of my normal workout regime of indoor/outdoor cycling and swimming, I alway pull something!! It is super frustrating. I plan on trying AquaFitness, Insanity, and Total Conditioning in the next month.

WHAT ARE YOU PLANNING ON TRYING THAT IS NEW AND WILL WORK YOUR BODY IN A DIFFERENT WAY? LET ME KNOW!!!!

Monday: Crustless Zucchini Tomato Pie served with fruit salad and crusty french bread or whole grain frozen rolls

Tuesday: Leftovers from slow cooker chicken and shrimp dish from Sunday night

Wednesday: Breakfast for Dinner – YUM!! Overnight Baked French Toast Casserole with scrambled eggs and fruit salad (prep time for casserole is the day before)

I looked around at a few recipes.  I  did not find any that were particularly healthy so I ended up on this one from AllRecipes.com.

Thursday: Cod with Mediterranean Arugula Salad

This “dressing” can be used on many different dishes. Yum!  I have not entered this recipe into the website yet so stay tuned!

Friday: Dad is in charge…I am racing an Olympic distance Aquathon in Elberton, GA — LAST RACE OF THE SEASON!

Saturday: Out at the Under the Sun concert at Chastain Park so pizza for the kid!!

Yep..you are reading that correctly!  This is an Oprah recipe.  We do not hear much about her lately but I know she is doing some great things.  I saw her picture on an airport billboard a few weeks ago that was marketing women in a positive way.  I loved seeing her face.  I do not think I missed one of her shows! 

Sunday:  Oprah’s Mar-a-Lago Turkey Burgers with side salad and homemade baked french fries
