What’s Cookin’ Week of June 22nd – Beyonce Theme Week
THIS POST IS A WEEK LATE SINCE I FORGOT TO POST I T LAST WEEK….
The 40th birthday celebration never ends for me…AND I LOVE IT! So, my tricky husband, Chris, asked me to be home on Friday afternoon between 2-5pm for the AT&T man to come to upgrade our internet modem. As I was pulling in the driveway, I noticed a white mini-van in my driveway. I thought, “Hmmm, AT&T must be so busy that they have outsourced their modem upgrades to a third party. Then, out popped about 4 huge balloons and someone that looked my my sister, Lisa, who lives in Virginia. WWWHHHAAATT IS GOING ON???? So, little did I know, that my husband and sister had totally got me with a surprise visit from her that was followed up by a phenomenal meal at The King and Duke and the Beyonce concert! Things could not get any better than that and I felt like the luckiest woman in the world!!
The King and Duke has phenomenal food and the Beyonce was, as expected, FANTASTIC! SHE NEVER DISAPPOINTS. The dancers were killer and her voice it to die for!
I figure that since the highlight of my week last week was the Beyonce concert, our weekly menu theme would be the names of Beyonce songs…SHE ROCKS!
“Move Your Body” Monday: Spaghetti with Chock Full O Veggies spaghetti sauce
“That’s How You Like It” Tuesday: Broiled Tilapia Parmesan with Roasted Potatoes, Broccoli, Carrots, and Cherry Tomatoes
“Why Don’t You Love Me” Wednesday: Pizza Night – homemade pizza crust (purchased from whole foods) with a variety of toppings yet to be determined. This will definitely include basil from my garden since it is growing out of control!!
“That’s Why Your Beautiful” Thursday: Breakfast for dinner…Feta and Spinach Frittatas served with a arugula salad and fruit salad (from whatever is in my house)
I probably will not use the red onion in this recipe since my kids are not onion fans.
“Freakum Dress” Friday: Been cooking all week…out to dinner!!!
“Schoolin Life” Saturday: Healthy Breaded Shrimp served with an side salad with cucumber and tomatoes from the garden and shoestring carrots. I will put out sliced cucumbers and shoestring carrots for the kids if they do not eat the salad. Not really sure yet what I will do on the starch on the side so if you have any suggestions, I am open!
