What’s Cookin’ Week of June 17th – Race Week

Inspiration finally hit this week.  I am not sure what came over me last week but I had such a tough time pulling the weekly menu together.  Like I said, some weeks are good and some weeks are bad.  Right now, we have 3 nights during each week where we are either attending a tutoring session (trying to make Math and Ava friends!) or swim lessons and then we usually have some other event so getting food on the table can be difficult.  I try to think of things that I can make ahead of time (tofu for Monday night) and then just reheat.  Or, make the night before and pop in the oven (Chicken Marbella).  

I am racing again this weekend…Olympic distance Aquabike (swim 800m and bike 25miles or something like that!).  I am excited except for a nagging hamstring on my left leg.  🙁 

For Father’ Day, Chris took Tyler (4) to the Super Hero exhibition at the Fernbank Museum…Do you think they are having fun?   The theme of the week is super hero names taken from SuperHeroDB.com.  I tried to pick at least the ones I knew and all females since I am assuming most of my readers are female (sorry, guys!).  It was unbelievable how many woman heroes there were!  Yeah!

What’s Cookin’ Week of June 17th

Marvelgirl Monday:  Three Pea Ginger Tofu Stirfry served with Ultra Crispy Unfried Tofu and brown ride or whole wheat noodles (I will probably have both starches on hand knowing that this plate may cause some concern at my table!)

Triplicate Girl Tuesday:  Lemon Chicken with Risotto and Peas (we missed this last week).  I will probably throw in some of my pesto as well!  Yum!   We are pesto crazy here

Wonder Woman Wednesday:  Salmon Nuggets served with Roasted Cauliflower and Tomatoes.  I will most likely also make the sauce from my Parmesan Tilapia recipe.  It would be super yummy with this.

We have salmon just about every week and honestly, I think my family gets sick of it.  However, I know it so good for you, I serve it anyways.  I am hoping this new twist will stop the whining (ok, let’s admit, that may never stop!) 

Thor Girl Thursday:  Chicken Marabella served with side salad and rice

Flash Gordon Friday:  We have a party that night so quick breakfast for dinner — scrambled eggs, toast, and fruit salad.

Spider Woman Saturday:  RACE DAY FOR MOM!  NO COOKING HERE.  Leftover Chicken Marabella from Thursday night

Superman (my dad’s favorite) Sunday Breakfast:  Breakfast idea this week….Breakfast Banana Bread Pudding.  This looks so quick and so easy!

She-Hulk Sunday Dinner:  Recipe Redux item so I will post on Friday!!  🙂
