HAPPY 40th BIRTHDAY TO MEE-EE, HAPPY BIRTHDAY TO ME!!!
This is a big week around here – Memorial Day, Race Day, and Birthday! Wow! I am turning the BIG 4-0 AND Chris and I are racing a 1/2 Ironman in Macon, GA on Saturday, June 1st (one day before my birthday!). So, we are carbo-loading around here starting on Wednesday! For all you carb-lovers, you are going to like this week. (As a side note, I love sports nutrition so if you are preparing for a race, I can help you with your nutrition strategy!) One great thing about race week is that you get to decrease your training so we will be chillin’.
What’s Cookin’ Week of May 27th – (Weekly Theme: Triathlon Lingo)
Memorial Day Monday:
Since most of you are probably cooking out, I figured I would just assume it was burgers and beers today!!
Transition Tuesday: Broccoli and Sausage Egg “Muffins” served with a side salad and fruit salad. Since my kids do not eat alot of green salad, I usually serve a fruit salad for the kids and a side salad for the adults.
Wetsuit Wednesday: Spinach and Cheese ravioli with steamed broccoli
Beach Start Thursday: Broiled Parmesan Tilapia with Quinoa, edamame, and bread rolls. I will mix some peas and carrots (frozen) into the quinoa
Beach Start – Starting from the beach and running into the water to begin a triathlon.
Floating Start Friday: My mother in law is watching the kids on Friday night so she will be in charge….my feeling is that it will be pizza! 🙂
Floating start: Starting from the water without the feet touching to begin a triathlon.
Super Race Day Saturday (We will be home late from the race and will be tired so this must be easy!):
Whole-wheat spaghetti served with Chock Full of Veggies Spaghetti sauce (unfrozen from freezer)and leftover steamed broccoli
This spaghetti sauce has so many veggies in it so do not feel like you need the extra veggie on the side. I just love broccoli with my pasta so I usually serve it.
Birthday Dessert will happen tonight since my mother in law is in town! We will be having Nothing But Bundt Cakes!!! I am SOOOOO excited!!!! If you live in ATL and have not tried these, get there soon!
BIRTHDAY SUNDAY: Out to dinner with Chris at one my favorite restaurants, Local Three!
I will start my night off with my favorite drink there called The Aviator and then follow that with whatever vegetarian meal. Yummy!
