What’s Cookin’ Week of May 6th

ImageWe celebrated Lindsey’s 3rd birthday last week and this is just one of the many celebrations we had with friends. Keep this on the low-down, but we actually celebrated her birthday a day early because there was a neighborhood party the day of her actual birthday so we had to improvise! Looks like the neighborhood party won out!!  But, if you are interested, here is a video link to one of her bday celebrations Happy3rdBdayLindsey.

This week, my favorite recipe was the Brushcetta with Broccoli Rabe, Eggs, and Bacon (and yes, I did not use fakin’ bacon!). I substituted spinach for the broccoli rabe because the broccoli rabe did not look very fresh. I love spinach anyways so it was a good swap. I toasted the bread just a tad so that the juices from the veggies would not soak through. Also, I used only the meat part of the bacon. I chipped off the fat after it was cooked. This recipe was super simple and super easy. A great weeknight solution for busy mom’s. Also, you can adjust your spinach to egg ratio. I love the veggies so I had more veggie than egg!

What’s Cookin Week of May 6th

MEATLESS MONDAY: “Breakfast Tacos” with side of fruit salad with mango and bananas
This recipe is totally made up in my head based on a few thing I read this week. Basically, I think I am going to scramble up some eggs, throw in tomatoes, black beans, and mexican cheese and put it in a whole-grain corn taco shell. I got these cool little taco holders from the dollar bin at Target that I want to use!! NOTE TO SELF — THESE WILL BE MESSY! LEAVE TIME TO SWEEP THE FLOORS!

TERRIFIC TUESDAY: Spinach and Cheese Ravioli’s (again!) with steamed broccoli

WACKY WEDNESDAY: Out to dinner to celebrate Ava’s Bridging Ceremony from Daisies to Brownies

TOO GOOD TO BE TRUE THURSDAY:   Meyer Lemon Slow Cooker Chicken with Sweet Potatoes from Inspired RD and Steamed Sugar Snap Peas

FISH ON FRIDAY: Broiled Tilapia Parmesan served with a side of spinach, wedge of lemon, and brown rice with sesame seeds, a touch of salt and pepper, and diced green onions mixed in the rice

SENSATIONAL SATURDAY:  Traveling to my Mom’s house for Mother’s Day! No cookin’!!
