What’s Cookin’ Week of September 2nd
Our last few weeks have been so busy with traveling that I did not even post my menu last week — because I basically did not have one. We were eating out and getting prepared foods from Wholefoods. We were only home for three nights so it was fine.
Over Labor Day weekend, we went up to Cashiers, NC to hang with my mom! We had a great time. We did a little hiking and had a great time hanging out at Fairfield Lake.
Meatless Monday: Breakfast for Dinner!! Scrambled Eggs with homemade whole wheat pancakes (from the freezer) and peanut butter and fruit salad with bananas and apples
We are traveling home from NC today and will be getting home late. I will bring some fruit from my mom’s house and scramble up some eggs I know I have in the refrigerator. For me, this is super easy and I know the kids will love it!
Tuesday: Slow Cooker Sesame Beef over Brown Rice and sugar snap peas
Ava likes to have lunch meat every day and I just feel like I need to start making it myself if this is what she wants every day. So, I figured we would try it for dinner and I would serve the leftovers as sandwiches for the week and see how that goes. I think I will feel much better about her lunch if I do this.
The recipe calls for chicken thighs but I will put in a turkey breast (no dark meat) and see how that goes.
Also, these crushed hot potatoes look like a fun thing to make with the kids!! They will love the crushing part and putting on all the spices. I will let them all designate their own potato. I KNOW this will make them eat them since they have not been big potato fans in the past.
Thursday: Leftovers of Sesame Beef served in taco shells with Black Bean, Corn, Avocado, and Red Pepper Salad
Friday: Pumped Up Sesame Salmon Bites served with sauteed spinach and Crushed Hot Potatoes from Wednesday
FULL WEEKEND OF TRAINING AT LIFETIME FITNESS….OUT TO DINNER ON SATURDAY!
Saturday: Out to dinner!!
Sunday: Chicken Marabella served over brown rice with leftover steamed veggies from wednesday.
I will make the chicken in the AM so Chris can put it in the oven before I get home.
