YEP…YOU HAVE SEEN IT ALREADY!  We are just about to end the last week of September and the Halloween decorations and candy are EVERYWHERE…Target, Wholefoods, Publix.  If you have not gotten your costume already, you may be too late!  Party City has had their full selection up for at least 2 weeks.  My Oriental Trading magazine is coming in my mail just about every 2 days pushing Halloween decor!  THIS IS THE START OF THE HOLIDAY SEASON….

The weather has turned a corner here in ATL so I am thinking some soup will be in store this week to get us into the Fall mood…

What’s Cookin’ Week of September 30th

Monday:  Chicken Noodle Soup with Whole Wheat Rolls and Side Salad and Orange Slices (not going meatless this time because I need the Sunday for prep work)

I really want to make some killer Chicken Noodle Soup so I am going all out and the process will start on Sunday with making a whole roasted chicken in my slow cooker. We will have that for dinner (variation from last week’s menu). Then I am going to make the chicken stock overnight and then the actual soup on Monday!

I have never done this before and thanks to www.110daysofrealfood.com for all the steps to make it super easy and manageable.

Meatless Tuesday:  Cheese and Broccoli Omelets served with Fruit Salad

Wednesday: Soup Again!!

Thursday: Grilled Teriyaki Pork Tenderloin served with steamed sugar snap peas and white jasmine rice

Friday: Garden Turkey Meatballs and Spaghetti with steamed broccoli and roasted asparagus and tomatoes

Saturday: This is a crazy busy day and we are out so the kids are on their own…just kidding. I will give them some leftovers from the week.

Sunday: Grilled Salmon Sunday it is!! Served with a whole grain rice medley that I will add peas and shoe string carrots for some added nutrition punch. Served with a side of sauteed spinach and kale chips.
