What’s Cookin’ Week of September 9th
As I write this post, I am getting super excited for my weekend trip to NYC for my sister-in-laws baby shower. But, the bonus part is that I am surprising Ava with a trip to NYC. She has NO idea. I am just going to pretend to take her to school on Friday and take her to the airport. She is going to be so surprised.
I have not been inspired by any themes recently but this week I will have a NYC theme with places we will go!!
Meatless Monday: Meatless Meatloaf served with broccoli and oven baked Sweet Potato fries from Alexia (frozen)
This recipe will be a total experiment. I have a feeling already that there will be ketchup served on the side of this masterpiece but I am going to try it anyways. Prep time is 60 minutes so I hope that I at least like it! To save time, I will not make my own sweet potato fries. I know this would be too aggressive for me on time during a week night.
Statue of Liberty Tuesday: Fritatta with Broccoli, Goat Cheese, and Sun-dried tomatoes (on half) served with a side of fruit
We have not had breakfast for dinner and quit some time so the kids will enjoy this tons.
American Girl Doll Wednesday: Super Salmon served with french style green beans and couscous mixed with peas and parmesan
Dylan’s Thursday: Slow Cooker Sesame Beef over Brown Rice and sugar snap peas
I never got to this one last week because we had too many leftovers that needed to be eaten so I froze the beef! I will make my second attempt this week.
Madeline’s Friday, Saturday: NYC Baby!!! Dad is in charge. I know that even if I make something, he will do his own thing — and it most likely will not me my approval!
Central Park Sunday: Out to dinner. Ava and I will have just gotten home so I will most likely not even have time to go grocery shopping. 🙂
